How Sweet It Is: One Morning at the Sugar Shack
This weekend many of the maple sugar houses (aka sugar shacks) in New Hampshire had open houses. I visited three and enjoyed a pancake, a hotdog boiled in sap, maple caramel popcorn, maple cream, maple cookies and maple candy. The various shacks showed off how they gather the sap and the evaporator they use to boil the sap into sweet syrup. Steam comes from the vents on the roofs of the shacks, because it takes 40 gallons of sap to make a gallon of syrup for your pancakes.
